12/31/2011 Lunch Quesadillas

The girls and I had Cheese Quesadillas and Danny's had turkey and cheese in it, on the side was
carrots, celery, and apples!
Quesadillas were made with 2% cheese and whole grain tortillas
quick and easy lunch

12/31/2011 Breakfast Baked Blueberry Oatmeal

Ingredients:
1 cup old fashioned rolled oats
½ tsp. baking powder
1 tsp. ground cinnamon
Pinch of salt
¼ cup maple syrup
1 cup milk
1 large egg, fully beaten
2 tbsp. unsalted butter, melted and cooled slightly
1 tsp. vanilla extract
1 cup blueberries (fresh or frozen) I used frozen, divided in half
 
Directions:
  1. Preheat the oven to 375˚ F.  
  2. Lightly grease a 2-quart baking dish.  
  3. In a medium bowl, combine the rolled oats, baking powder, cinnamon and salt.  
  4. Stir with a fork to combine.  
  5. In a measuring cup, combine the maple syrup, milk, egg, butter, and vanilla.  
  6. Spread half of the berries in a single layer over the bottom of the baking dish.  
  7. Sprinkle the dry oat mixture over the fruit in an even layer.  
  8. Pour the liquid ingredients evenly over the oats.  
  9. Sprinkle the remaining berries over the top.  
  10. Bake for 35-40 minutes, until the top is browned and the oats have set.  
  11. Let cool 10 minutes before serving.
My eggs were not beaten enough to mix in all the way so be sure you beat yours better than I did!
Everyone in our house loved it, this will for sure be a weekly staple but with different fruits and flavors!
I prepared mine the night before and stuck it in the refrigerator over night, quick, easy, and healthy :)

First Post

    In an effort to stay more organized, and save time, money, and energy last night I began creating food menus for breakfast, lunch, and dinner! I have started by using a menu template I found from The Project Girl, I am using the top menu with spots for Breakfast, Lunch, and Dinner and spots for your shopping list! Made my first menu and list last night and did my shopping:)
