The perfect treat for the first day back from Christmas Break so totally worth every fat gram and calorie!

S'more Cookie Bars
1/2 cup butter, room temperature
1/2 cup brown sugar
1/2 cup sugar
1 large egg
2 tsp vanilla extract
1 1/3 cups whole wheat flour
3/4 cup graham cracker crumbs (about 7-8 full graham crackers)
1 1/4 tsp baking powder
1/4 tsp salt
2 super-sized chocolate bars (I used Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows they disappear when baked)

(I made 4 batches of the recipe and used 2 9x13 pans)
Line an 8-inch square baking pan with parchment paper.
To make graham cracker crumbs I stuck crackers in my food processor
Then add in flour, baking powder and salt and blend in food processor
In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.
Add dry mixture to the butter mixture and mix at a low speed until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the pan.
(don't worry it will be very thin! The baking powder will make it rise while cooking)
Place chocolate bars over dough. Two 5 oz. Hershey’s bars should fit perfectly side by side, but break the chocolate (if needed) to get it to fit in to a single layer.
(remember I used 9x13 pans for mine)
Spread marshmallow fluff evenly over the chocolate layer.
Place remaining dough in a single layer on top of the fluff. Use your dry palms to flatten it out. It's ok if the fluff isn't covered completely however make sure they are smaller exposed areas instead of one larger one.
Bake for 30 to 35 minutes, until lightly browned.
Cool completely before cutting into bars
(mine took 3 hours, but be patient if you don't wait it will slide apart and crumble and look really bad)
Makes 16 cookie bars.
