Smoothie Ingredients
  • 2 cups of Vanilla Coconut milk
  • 2 tablespoons of Ester-C (vitamin granules) I use orange flavor
  • 2 heaping tablespoons of Whole Psylliun Husk (dietary fiber flakes)
  • 2/3 cups frozen blueberries
  • 1 cup frozen strawberries
  • 3/4 cup key lime pie yogurt
  • 1 teaspoon cinnamon

by the end of the night my hand was throbing and when I said ok time for me to make dinner Chloe decided to take charge of dinner planned and did it all by herself! I am so lucky to have such sweet girls :)

to BBQ chicken I grind sea salt on chicken then grill after turning it over I brush BBQ sause on the cooked side, when the other side is cooked then flip and grill each side 2 minutes with sause on.

1/11/2012 Teacher Treat Orange Zucchini Muffins

Zucchini Muffins
makes about 12 Muffins
What you Need:

2 Cups Whole Wheat Flour
2 Tsp Cinnamon
1/2 Tsp Baking Soda
2 Tsp Baking Powder
1/2 Tsp Salt
2 Eggs, well beaten
2 Tsp Vanilla
1/3 Cup Orange Popsicle yogurt
2/3 Cup Agave Nectar
1 1/2 Cups Zucchini, shredded (about 2 medium zucchinis)
zest of 1 mid size orange
1 1/2 tsp of vegetable oil (didn't add it last time but will to help the muffins not stick to the papers so much)

1. Preheat oven to 350 degrees.
2. Place flour, cinnamon, baking soda and powder, and salt in a large bowl and mix.
3. Add remaining items in a separate bowl and whisk to combine.
4. Pour the wet mixture into the flour mixture and stir just until the ingredients are combined.
5. Scoop the zucchini mixture into muffins cups (I use an ice cream scooper to keep them the same size).
6. Bake 17-20 minutes

I cook my pot roast in an oven bag with a tablespoon of flour, and 5 tablespoons of balsamic vinegar and cook at 350 for 1 hour 45 minutes!

1/10/2012 Breakfast Blueberry Muffins

What you Need:
  • 2 eggs
  • 1  cup truvia
  • 3/4 cup vanilla yogurt
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1 tbsp cinnomon
  • 2 cups whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 cup coconut milk
  • 2 cups blueberries (I used frozen)
What you Do:

  1. beat eggs, truvia, and yogurt
  2. then add the remaining ingredients except blueberries
  3. Once the mixture is combined, gently fold in the blueberries
  4. bake at 350 for 18-25 minutes

1/9/2012 Dinner Chicken Roll Ups and Green Trees



What you Need:
  • 3 cups chopped cooked chicken
  • 1/4 cup milk


  • 1 cup Ricotta cheese

  • 1/8 teaspoon white pepper

  • 10 lasagna noodles, cooked and drained


  • 1/4 cup grated Parmesan cheese

  • 2 cups  Spaghetti Sauce

What to do:

  1. In medium bowl, combine chicken, cheeses, milk, and pepper
  2. Spread  about 1/3 cup mixture on each lasagna noodle
  3. Then roll in a jelly-roll fashion
  4. In a 13 by 9-inch baking dish, spread 1 cup spaghetti sauce
  5. Arrange lasagna rolls, seam-side down in sauce in baking dish
  6. Top with remaining spaghetti sauce
  7. Cover with foil
  8. Bake at 375 for 30-35 minutes
  9. Cool 5 minutes
  10. Serve with additional Parmesan cheese.

1/9/2012 Breakfast Baked Strawberry Oatmeal

Not the best photo should have taken one in the baking dish!


Ingredients:
1 cup old fashioned rolled oats
½ tsp. baking powder
1 tsp. ground cinnamon
Pinch of salt
¼ cup maple syrup
1 cup milk
1 large egg, fully beaten
2 tbsp. unsalted butter, melted and cooled slightly
1 tsp. vanilla extract
1/2 cup strawberries (I used fresh)
Directions:
  1. Preheat the oven to 375˚ F.  
  2. Lightly grease a 2-quart baking dish.  
  3. In a medium bowl, combine the rolled oats, baking powder, cinnamon and salt.  
  4. Stir with a fork to combine.  
  5. In a measuring cup, combine the maple syrup, milk, egg, butter, and vanilla.  
  6. Spread all of the sliced berries in a single layer over the bottom of the baking dish.  
  7. Sprinkle the dry oat mixture over the fruit in an even layer.  
  8. Pour the liquid ingredients evenly over the oats.    
  9. Bake for 35-40 minutes, until the top is browned and the oats have set.  
  10. Let cool 10 minutes before serving.

1/4/2012 Teacher Treat S'mores bars

The perfect treat for the first day back from Christmas Break so totally worth every fat gram and calorie!
(just ask our teachers)


S'more Cookie Bars

1/2 cup butter, room temperature
1/2 cup brown sugar
1/2 cup sugar
1 large egg
2 tsp vanilla extract
1 1/3 cups whole wheat flour
3/4 cup graham cracker crumbs (about 7-8 full graham crackers)
1 1/4 tsp baking powder
1/4 tsp salt
2 super-sized chocolate bars (I used Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows they disappear when baked)
(I made 4 batches of the recipe and used 2 9x13 pans)

Preheat oven to 350°F.
Line an 8-inch square baking pan with parchment paper.
To make graham cracker crumbs I stuck crackers in my food processor

Then add in flour, baking powder and salt and blend in food processor
In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.
Add dry mixture to the butter mixture and mix at a low speed until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the pan.
(don't worry it will be very thin! The baking powder will make it rise while cooking)

Place chocolate bars over dough. Two 5 oz. Hershey’s bars should fit perfectly side by side, but break the chocolate (if needed) to get it to fit in to a single layer.

(remember I used 9x13 pans for mine)
Spread marshmallow fluff evenly over the chocolate layer.
Place remaining dough in a single layer on top of the fluff.  Use your dry palms to flatten it out. It's ok if the fluff isn't covered completely however make sure they are smaller exposed areas instead of one larger one.

Bake for 30 to 35 minutes, until lightly browned.

Cool completely before cutting into bars
(mine took 3 hours, but be patient if you don't wait it will slide apart and crumble and look really bad)
Makes 16 cookie bars.

no homemade mac and cheese here is the box I use I do make homemade for dinners

1/4/2012 Breakfast French Toast and Blueberries


6 whole wheat toast (if its a little stale that's great)
3 eggs
2 tsp vanilla
1 tsp cinnamon
1/2 cup coconut milk
powdered sugar

beat together eggs, vanilla, cinnamon, and coconut milk
dip each side of bread in mixture
in pan or large flat grill cook on each side til the start to brown and flip
sprinkle with powdered sugar
and serve

1/3/2012 Dinner Tacos and Corn


These quick and easy tacos are a favorite at our house

one can of turkey chili (I use wolf brand)
1/2 lb ground turkey
1/2 lb 97% lean ground beef
your favorite taco toppers (we use 2% cheese and lettuce)
whole wheat tortillas

  • brown ground meats together in a skillet
  • when cooked all the way mix in can of chili
  • cook stirring ofter about 5 more minutes
  • scoop on whole wheat tortilla top and serve

I bake my potatoes by coating them with olive oil and putting a turn of sea salt on top, then wrap them in foil and bake at 350 for about 45 minutes to an hour depending on how big they are!

1/3/2012 Breakfast Smoothie and Not Just Banana Bread



 Smoothie Ingredients
  • 2 cups of Vanilla Coconut milk
  • 2 tablespoons of Ester-C (vitamin granules) I use orange flavor
  • 2 heaping tablespoons of Whole Psylliun Husk (dietary fiber flakes)
  • 2/3 cups frozen blueberries
  • 1 cup frozen strawberries
  • 3/4 cup vanilla yogurt
  • 1 teaspoon cinnamon
I make them a ton of different ways but this was today's!

1/2/2012 Dinner Homemade Pizza

Ingredients for dough

  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 1 1/4 cups warm water
  • 2 cups whole wheat flour
  • 1 1/3 cup un-bleached all-purpose flour
  • 1/2 tablespoon sea salt or garlic salt
  • 2 teaspoons extra virgin olive oil

Directions

  • In a larger cup dissolve sugar and yeast in warm water leave alone until foamy about 3-5 minutes
  • I use my food processor with the dough blade add flours and salt
  • With machine running pour small amounts of the liquid in slowly allowing liquid to absorb before adding more
  • Run untill a dough ball forms and cleans the sides of the bowl
  • The dough might be sticky when you pull it out coat it with the oil
  • The place dough in either a gallon size Ziploc bag or a container with a lid
  • Let dough rise in a warm spot for about 45-50 minutes
  • Place on a lighted floured spot and punch down the let rest about 5 minutes
  • Roll to your favorite pizza size and top!
  • Bake at 375 for about 20-22 minutes checking for crust to brown
  • Cool at least 3-5 minutes cut and enjoy!

1/2/2012 Lunch Hot Dogs and Soup


Nothing special about today's lunch the kids had turkey hot dogs, carrots, and bananas

And I had a bowl of Campbell's Select Harvest Mexican-Style Chicken Tortilla Soup I added 1/4 cup left over whole grain rice to it while it was cooking on the stove. I do NOT care for the soup that says

1/2/2012 Breakfast Not Just Banana Bread

Ingredients
1 cup un-bleached all-purpose flour (I always use un-bleached flour)
1 cup whole wheat flour
1 cup sugar in the raw
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 applesauce or vegetable oil
1 1/2 teaspoon vanilla extract
2 cups fruit puree (I used bananas, pears, and a tad of orange juice since it didn't quite make 2 cups)
1/2 cup yogurt (I used vanilla this time)
spray or butter to grease pan

Directions
  •  Preheat oven to 350
  • Grease 1 9x5 inch loaf pan
  • Mix together with a fork flours, baking powder, baking soda, salt, & cinnamon
  • I use my kitchen aid to cream the eggs and sugar
  • Then add applesauce or oil and the vanilla mix well
  • Mix in the fruit puree
  • Add the flour mixture alternating with the yogurt, start and end with the flour (didn't think this would make a difference but it really does!)
  • Be careful not to over mix after adding the last of the flour
  • Pour into loaf pan sprinkle some cinnomon and sugar mix on top and bake about 1 hour
  • Let rest 10 minutes and then turn out the loaf on a wire rack to cool.


I've made this with peaches, pears, cauliflower, blueberries, and strawberries (with seeds strained out) mix it up but I always use at least 1/4 cup of banana. Change the yogurt to any flavor! This recipe I use in a combination between 4 or 5 others I have tried in the past! This bread also freezes well wrap in parchment paper then place in a freezer bag up to 3 months. I always double my batch and make two loaves with 6 of us it goes fast!

1/1/2012 Dinner Mini Meatloaves




Here's a fun twist to a classic! To my kids every thing taste better when its a mini version why I don't know, but whatever works to get them to eat it!

Ingredients
  • 1/3 lb ground pork
  • 1/3 lb ground turkey
  • 1/3 extra lean ground beef
  • 1 cup mid size bread crumbs
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon minced garlic
  • 1 cup tomato sauce
  • 1/2 cup 2 % mozzarella cheese
Directions

  • Preheat oven to 375
  • Mix all ground meats and garlic together (I've found it's much easier to use my hands)
  • In a cup or small bowl mix bread crumbs, and Italian seasoning
  • Mix meat and bread crumbs together
  • Grease muffin tin
  • Scoop mixture into muffin tin (I used a small ice cream scooper and make them over flowing)
  • Push down mixture and make a small indent
  • Add one tablespoon of tomato sauce to each piece
  • Add a pinch of cheese to each piece
  • Bake for about 35-40 minutes
  • Cool at least 5 minutes

1/1/2012 Lunch Pasta Salad

Super quick and easy lunch. I used some leftover whole wheat noodles, roman lettuce, cucumbers, tomatoes, a pinch of parm cheese, teaspoon of extra virgin olive oil, and a table spoon of balsamic vinegar toss and enjoy. Great to use those left over noodles!

1/1/2012 Breakfast Chocalote Chip Pancakes & Oranges


 

Ingredients

  • 1 cup all-purpose flour
  • 1 cupwhole wheat flour
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1-1/2 cups milk
  • 1/4 cup melted butter
  • 1/2 cup chocolate chips
  • 1 teaspoon vanilla
  • 1 teaspoon cinamon

Directions

  • In a large bowl, combine the flours, sugar, cinamon, baking powder and salt.
  • Combine eggs, vanilla, milk and butter
  • Add to dry ingredients just until moistened.
  • Fold in chocolate chips.


Super yummy pancakes! I however pulled aside some batter before adding the chocolate chips for me :)

    12/31/2011 Dinner Party

    We were invited to a great New Years Eve party that had lots of great food! So I was off the hook for dinner!
